S’mores Bars

My kids love marshmallows and a while back I made these S’mores Cookies after seeing them on Pinterest.  My son went nuts over marshmallows being on cookies (ok, so did my hubby).  I’ve been wanting to try making s’mores bars so I reviewed a few recipes online and picked one closest to the ingredients I had on hand, then adapted it slightly to my taste (dark or semi-sweet chocolate only!!).

What You’ll Need:

  • 1 cup flour
  • 1 cup graham cracker crumbs
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 tsp vanilla
  • 1 stick unsalted butter, at room temp
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 cup semi-sweet chocolate chips
  • 1 1/3 cup mini marshmallows
  • Parchment Paper

Directions:
Preheat oven to 350.

In a stand mixer fitted with the paddle attachment, cream butter and brown sugar.  Add egg and vanilla and beat well.

In a small bowl, mix flour, graham cracker crumbs, baking powder, and sea salt.  Adding a bit a time, mix the dry ingredients slowly into wet ingredients.  Mix well.

Reserve about 1/4 of dough.  Grease a 9×9 brownie pan and add parchment paper leaving extra on the sides so it’s easy to pull the bars out later (see picture).  Press remaining dough evenly into bottom of pan.  Top with chocolate chips and then marshmallows.  Break the dough you set aside into small pieces and scatter over the top of the bars.

This is what it will look like prior to baking.

Bake for 25 minutes and then broil on hi for 60-90 seconds to get the marshmallows nice and toasty in color.  Watch closely since things broil fast on hi!

Allow to cool completely.  Lift from pan and cut into bars.  (You may need to run a knife along the edges of the pan before lifting bars out if any marshmallows melted to the edge of the pan).

Enjoy with ice cold milk!!

    These bars look to die for. I also love the collared bleach shirt you did a little bit ago. SO CUTE. Glad you like the pork…now I need to go and get some of that Risotto mix from Target!
